Un piatto speciale della metropoli danubiana, che è stato riscoperto da molti buongustai , è noto agli intenditori come “Beuschel”, un piatto di carne servito in modo tradizionale con un fagottino.
Cosa significa questa espressione genuinamente viennese ? Il ” Beuschel ” si riferisce all’intestino superiore degli animali macellati, soprattutto bovini o vitelli, come i polmoni. Questa prelibatezza non dovrebbe mancare nel menu di un vero ristorante viennese; sebbene questo piatto sia stato trascurato per decenni, attualmente sta vivendo una rinascita nei ristoranti viennesi.
Per spiegarlo: consiste in piccoli pezzi di carne in salsa serviti in un piatto fondo.
